Winemaker’s Notes:
Colour: Vibrant crimson red.
Bouquet: A very attractive nose displaying dark
chocolate, mint and blackberry fruit aromas, with subtle toasty
oak.
Palate: An attractive full bodied wine showing
powerful rich cherry and mint flavours with spicy characters, on
a backbone of soft velvety tannins, with a generous balance of
oak and finish of good persistence. A wine that shows excellent
integration of fruit, oak and tannins.
Cellaring Potential: Made to drink while fresh
and the flavours are vibrant although patient cellaring over the
next couple of years will develop the fruit flavours further.
Winemaking Details: A selection of high quality
Merlot and Cabernet Sauvignon parcels with varietal fruit flavour
was chosen for this blend. After crushing we included whole berries
in some ferments, while other ferments were drained and returned
for maximum extraction of colour, flavour and tannins from the
grape skins. By doing this and with the moderate fermentation temperatures
it provided a complex array of base wines, from which we were able
to create a blend of generous fruit flavour coupled with great
drinkability. The Cabernet Sauvignon provides structure and ageability
to the wine whilst the Merlot adds mid-palate richness.
Serving Suggestions: Delightful to drink now.
It will make an exceptoinal partner for rich game dishes such as
duck and turkey, and would also go well with a nice aged cheddar
cheese. For something a little different try Mongolian lamb!
