Non-Vintage Cockatoo Ridge Brut

The wine shows a pink tinge, resulting from the inclusion of Pinot Noir in the blend. It displays a bouquet of melons and toast with a complex, dry full flavoured palate and creamy mousse, with perfect acidity providing a long refreshing finish.

Cockatoo Ridge wines reflect the real taste of Australia -- fruit driven with complexity and depth of flavour. The NV Brut, with its pink hue, displays a dry, full flavoured palate and a long refreshing finish. Sparkling wine demands the most serious attention in its making. Sourcing grapes across regional boundaries provides variety and complexity. Cockatoo Ridge NV is blended over at least two vintages to provide consistency, reliability and complexity to the flavour. Bottle fermentation and the subsequent period of resting on yeast lees provides both the natural effervescence and the soft creaminess so desirable in quality sparkling wine.
