Viticulture
Each varietal was harvested at its peak, beginning
with the shiraz in mid March, then the cabernet in early April
and, finally, the mourvedre in mid April. The yield for all varieties
was less than 2.5 tons per acre.
Winemaking
Between five and eight days on skin during fermentation;
the wine was aged in new and used oak barrels for 12 months and
given a final filtration before bottling.
Tasting Notes
Color: Deep red cherry
Bouquet: Lifted and spicy with berry fruit
Palate: Medium weight, rich and spicy with refined, soft tannins.
The wine derives spiciness from the mourvedre, richness from the
shiraz and berry flavors from the cabernet.
