Tasting Notes
The wine has a deep straw appearance with a clean bouquet
of peach and apricot, with creamy, butterscotch tones.
The wine is full bodied with an oily texture and soft finish.
Viticulture
The vines were trained to four canes on a Vertical Shoot Positioned
trellis. Balance shoot thinning, leaf plucking and trimming
and tucking were carried out to maintain a healthy canopy
and ripening conditions. The 2007 vintage was an excellent
one in Gisborne with long, dry spring and ripening period,
resulting in clean fruit with excellent flavours.
Food Matching
Our chardonnay is a great partner for pasta, quiches and
creamy coconut curries.
Winemaking
The fruit was machine harvested on flavour criteria in cool
evening conditions, de-stemmed and lightly pressed with minimal
skin contact. The free run juice was lightly settled and
the juice fermented in stainless steel with selected yeast
strains to aid mouthfeel and texture. The wine underwent
100% malolactic fermentation in tank.
