Timmermans History

In a small region of Belgium not far from Brussels, breweries have been concocting Lambic beers for centuries. One of the oldest of these breweries, and a member of the Belgium Family Brewers Association, is Brasserie Timmermans. Originally identified as The Mole Brewery, the family owned brewery has been producing its famous Lambic beer since 1706.

Lambic beer is marked by its unique fermentation method. The beer vats are left unsealed so wild yeast may grow uninhibited. Once fermentation begins, the beer is stored in barrels and aged for up to three years. Only six breweries still rely on this brewing method, which leads to remarkable and distinct flavors, unachievable anywhere else.

Brasserie Timmermans is particularly famous for its sour beer, Oude Gueuze. It has repeatedly won top honors, most recently at the 2015 World Beer Awards. Visitors can learn more about Lambic beers, as well as taste them, by visiting the brewery’s museum.
