Tasting Notes

This blend of Cabernet Sauvignon and Syrah shows a broad spectrum of red and dark fruits such as cassis and sour cherries through to blueberries, blackberries and Syrah derived floral notes. The mouthfeel is lush and shows some interesting creaminess. Firm but smooth tannins provide a sound frame to the well balanced palate.

Aging: 40% aged for 10 months in seasoned French oak
Vinification: The grapes were hand-picked between late March and late April and immediately transported to the winery for sorting and gentle de-stemming. The fruit was cold macerated for four days followed by a warm ferment in open stainless steel tanks lasting three weeks with punch downs taking place three times daily.

History of Reserva Cabernet Sauvignon Syrah 2016

Oveja Negra’s estate Nilahue vineyard in the Colchagua Valley (80 miles south of Santiago). The Colchagua Valley differs from other Chilean wine regions in that it runs between two spurs of the Andes Mountains, one to the north and one to the south, separated by an average distance of 22 miles. Summers are warm and dry with a significant day-night temperature variation which allows the grapes to ripen slowly with very good concentration and preservation of aromas and flavors. Winters are generally cold and rainy. Yield was between four and five tons per acre.
